A high moisture content and minerality give this salt a sweet flavor, with hints of wet stone. You’ll find the granules melt quickly on the tongue and crunch apart easily. This finishing salt is perfect for meats right out of the oven or skillet. The salt will maintain some crunch, but much of it will melt apart in a gamey brine that’ll enrich every bite of the meat.
