Prickly on the tongue and nose, this pale green powder has a shocking pungency under its timid aroma.
The aroma of wasabi is muted, though fresh and green with hints of horseradish and popcorn. It also stings a bit when you smell it. The flavor is spicy and sharp, but cleansing and is used as both a flavoring and a palate cleanser. The flavor dissipates when cooked so it must be served cold. Mix the powder with a bit of water to create a paste to serve with meat or sushi. Add a pinch to homemade aioli for a prickly finishing sauce.
