Prickly on the tongue and nose, this pale green powder has a shocking pungency under its timid aroma.
The aroma of pure, ground wasabi is muted, though fresh and green with hints of horseradish and popcorn. It also stings a bit when you smell it. The flavor is spicy and sharp, but cleansing and is used as both a flavoring and a palate cleanser. The flavor dissipates when cooked so it must be served cold. Mix the powder with a bit of water to create a paste to serve with meat or sushi. Add a pinch to homemade aioli for a prickly finishing sauce.
The plant grows in Japanese freshwater streams and is an important flavoring in Japanese cuisines. The root and paste rarely keep their pungency long, which is why the powder is much preferred by cooks and chefs alike.
