Ecuadorian Nacional cacao is considered to be the “mother” cacao line and has been harvested by the indigenous peoples of Ecuador for millennia. Historically, Nacional was prized as the favored cacao of gourmet chocolate producers throughout the world, before Nacional cacao crops were decimated and replaced over the 20th century by alternative hybrid cacao species--miraculously, Nacional's now on the rebound! With its overall smooth flavor and delightfully complex symphony of floral, berry, nutty, and cinnamon notes, heirloom Nacional cacao production is increasing allowing us to make these amazing cacao nibs available for chocolate lovers, home chefs, and food manufacturers to craft a truly gourmet chocolate experience. Basic Preparation
    These Cocoa Nibs are ready to be consumed as is, sprinkled over ice cream or added to a raw trail mix for a nutritional snack. Also a wonderful addition to any fruit or coconut-based smoothie.
Recommended Applications
    Cocoa nibs are cocoa beans that have been roasted, separated from their husks and broken into smaller pieces. Cocoa nibs can be eaten as a snack or added to baked goods and other dishes for added crunch and chocolaty flavor. These flavorful little pieces also have great nutritional value. Cocoa Nibs taste vaguely similar to roasted coffee beans. Cocoa Nibs are always found in small pieces, rather than coffee bean-sized pieces. The flavor is slightly nutty and, while there are definitely some chocolate notes in there, they are primarily going to contribute texture and a hint of bitterness (the same as raw cocoa powder). Cacao nibs do serve to draw out darker notes in chocolate, which is why they are such a popular addition. Cocoa Nibs are one of the best dietary sources of magnesium as well as a good source of calcium, iron, copper, zinc and potassium. This product is naturally glutenfree and is also certified Kosher.
